1 can Smiling Fish Fried Baby Clams with Chili (70 g.)
2 corn tortillas
1 cup palm oil for frying
1 T. unsalted butter
1 T. finely chopped onion
1 T. minced chive
200 g. frozen spinach
200 g milk
1 T. unsalted fresh
4 T. grated mozzarella cheese
4 T. grated Parmesan cheese
salt and black pepper

How to
1. Cut the tortilla into equal triangle pieces. There will be 16 pieces in total. When the oil is hot, add the tortilla sheets and fry until golden brown. Rest on a grill and drain the oil.

2. Stir fry spinach with a butter in a pan over medium heat. Add onions and garlic and stir. When the onion is cooked and soft add spinach and milk, Stir well. turn off the heat, Transfer into a blender, blend until smooth, season with salt and pepper as desired, stir well, put in a bowl.

3. Preheat the oven to 200 ° C. Scoop ½ tbsp of blended spinach mixture on top. Sprinkle with a little mozzarella cheese, put 2 clams, sprinkle evenly with parmesan cheese. Bake (on the top rack) in the preheated oven. Bake until cheese is melted and nicely browned, about 5 minutes. Remove from oven and serve immediately.
